Thyme-scented sea bass roulades

Directions:
Pre-heat the oven to 180°C. Mince all the herbs, dress the mixture with the lemon juice, grated lemon zest and a pinch of salt. De-bone the sea bass fillets and remove all the scales. Arrange the fillets skin-down and dress with the chopped herbs. Wrap the fillets around themselves to create a sort of roll, with the skin on the outside. Tie with twine or affix with a wooden toothpick. Arrange the roulades on their sides (vertically) in a barely greased baking tray. Place the sprouts dressed with oil, salt, pepper and lemon around them. Put in the oven and cook for 20 minutes. Once cooked, remove from the oven and arrange on a serving platter with the sprouts around them. Add a bit of white wine to the cooking juices and heat over a medium-high flame for a minute to reduce further. Use this liquid as a condiment for the roulades.
